Summer Bulgar Salad

With the heat comes the desire to make a meal that doesn’t require you to stand over a hot stove. Enter summer salads! It is so easy to make a delicious, healthy and refreshing salad. Here is a Bulgar Salad that doesn’t even require you to turn on the stove to cook the Bulgar! If you want to make this gluten free, just substitute in quinoa (you will have to cook that on the stove).

Summer Bulgar Salad

  • 1 cup bulgar
  • 1 cup water
  • 1/2 cup corn kernels
  • 1/2 cup peas
  • 1/4 cup extra virgin olive oil
  • Juice of one lemon
  • zest of one lemon
  • 1 cup cherry tomatoes sliced in half
  • 1 tbsp fresh parsley
  • 1 tbsp fresh oregano
  • salt and pepper to taste

1. Combine bulgar and water into a big bowl and let sit for one hour.

2. Once the bulgar has absorbed all the water, add in the olive oil, lemon juice and zest and stir to combine.  Add in corn, peas, tomatoes, and all seasonings.  You can serve right away but I like to let it sit in the fridge for about 3o minutes to let it chill and allow the flavors to meld.

See? Wasn’t that like the easiest meal to put together?  Like I said before you can sub quinoa in for the bulgar.  Just combine one cup quinoa with two cups water, bring to a boil, cover and let simmer for 15 minutes. You can also add whatever vegetables you have on hand.  Zucchini or summer squash would be really good! So beat the heat and enjoy your summer salad!
